My first Paleo Waffle Recipe

So the other day, I went ahead and bought a pound of buckwheat flour, which I found for a good price at a local store.

After using some of that flour earlier in the week for yet another pancake experiment, I tried my luck on waffles two days ago:

Here is how I got to the results above:

- 2/3 cup of melted Butter
- 2 Tbsp. Honey
- 1/2 Tsp. Vanilla
- 3 Tbsp. Coconut Milk
- 4 Eggs
- Lemon Juice
- 4/1/2 cups Buckwheat Flour
- 50g Ground Hazelnuts
- 2 Tbsp. Cinnamon

Instructions:

Combine ingredients one after the next, and mix in between steps until everything turns into a smooth dough:

Once your dough is ready, add a couple of Tablespoons to a heated and greased waffle maker. Waffles should take about 2 – 3 minutes each until done.

Since this dough seems to be a little stickier than regular waffle dough, I used a spoon to spread the dough in the waffle maker before baking.

After about half an hour, you should have a pile of 6 to 8 waffles ready to be served with unsweetened whipped cream and fresh fruit.

I set two waffles aside for yesterday´s breakfast, but it seems that they dry out faster than regular waffles. So eat them while still warm and fresh for the best enjoyment.

Also, this recipe is only slightly sweetened so adding fruit, pureed fruit or something similar will likely be enough to fix any sweet-cravings.
